A recent question asks how to fry eggs on a large scale. That prompts me to ask, can fried eggs be fried in advance and either cooled for later reheating, or alternatively kept warm for a prolonged period? If the latter case is an option, what is the ideal temperature to keep them at?
Surprisingly, an egg is the most difficult thing to cook. McDonalds serves a lot of eggs in their breakfast menus and they haven't found a way yet to mass prefry / prcook these suckers. So I doubt this could be done.
I tried half cooking scrambled eggs before and then finishing them off later, and the result was crap at best.
I doubt you can do that with non-scrambled eggs, as the yolks and whites will change physical properties when heated / cooled / reheated
Fried eggs will keep for a few minutes at best, from my perspective.
If they are kept hot enough for any length of time to keep them palatable, then they will cook further.
If they cool off, they would need to be reheated, with attendant further cooking also done.
I have kept fried eggs cooked in my warning tray of the oven for a couple of minutes while something else finished, kids came downstairs, but no more.
You can keep poached eggs for quite a while as long as you stop the cooking after they get to the desired temp. Basically, you poach the eggs then slip them into a bowl of ice water. They can then be fridged for up to 48 hours. To serve, just rewarm in the poaching liquid.
For all other egg applications, your results are going to be so much better by cooking fresh and cooking eggs takes so little time that you would do much better to just cook to order.
I'm currently at a hotel in Spain. We are having a buffet breakfast and one of the meals are sunny-side-up fried eggs. I estimate they probably fry several hundred eggs per breakfast. I wondered how they pull it off in the kitchen, especially the "breaking eggs" part. I can imagine two extremes: A cook is breaking eggs manually, taking extra care not to put any shell onto the frying pan. Some kind of automated process takes place, e.g. eggs are put in some foamy container, the top is cut off and then the whole lot is flipped over the pan. The truth is probably somewhere in between
I have some good smoked cod roe that I want to create a breakfast dish with. I have no idea what to do with the cod roe though - I've never used it before. Do I slice it? Fry it? Spread it? Ideally it would be toast, fried eggs and the cod roe plus whatever else would go well to make a breakfast treat for my girlfriend (who's a chef so it has to be good :))

(Prompted by an interesting radio show on ducks and duck eggs). For general uses, in either an egg-only dish, or an egg-centric dish like a custard or quiche, can I use eggs other than chicken eggs? Other than the obvious that the volume of the dish will vary, and perhaps the cooking time, can I make a fried quail egg on toast, or a duck egg quiche? Or for that matter, to echo another recent question, a soft-boiled ostrich egg - presumably with lots of dipping toast!

I was making a dish that requires the use of onion paste. Usually I'd fry the paste, but I had a bunch of other stuff that needed to be fried too, so I put that in first, and I guess by the time I added the onion paste there wasn't much oil left and it didn't get fried. Now the dish tastes too oniony, and is almost unpalatable. I thought I could fix it by boiling the hell out of it, as onion turns sweet when you boil it - it was a long shot, but I was desperate.
