I have a recipe that calls for Poblano peppers but our store does not have them. I found this which references using Anaheim Peppers but they don't have those either.
What is a good alternative?
It is a roasted stuffed pepper dish that I need them for.
You can stuff any pepper which is large enough.
Poblano are moderately spicy. You can use bell peppers, but they will not be spicy. You might want to make up for that by including some spicier small peppers in your stuffing, perhaps a serrano or a jalapeno or seventeen, depending on your personal taste.

I found a great recipe for Chilles Rellenos - the first time I made them - they came out perfect. I used pasilla Peppers and the spice/heat was just right. Since then, I have not been able to duplicate the heat level no matter what type of pepper I use. I'm removing the membranes and seeds - and the skin as I can - it's really hard to do. Other than that, the only difference I can think of is that when I made them the first time it was fall and now it's winter. Working with a variation of this chili recipe I meticulously cleaned my peppers of seeds and veins to produce a 'milder' chili. Unfortunately this batch was almost 'too mild' (heat wise, the flavor was very good). I am thinking that next time around I will leave in some of the seeds/veins to give it just a bit more 'kick'. The question is, given the choice of Anaheim, poblano and jalapeno peppers would it matter to the flavor which pepper I allow to be the source of the heat? Background information: poblano peppers are one of the most common peppers in Mexican food. Pasilla peppers are something entirely different - the dried form of the chilaca. I'm originally from... market with a decent amount of Mexican food (and Spanish-speaking employees) - and just recently I noticed they even have anchos (dried poblanos) labeled as "dried pasillas". We received some extremely hot peppers of some sort in our CSA bin. They're a light green color and look like under-ripe habaneros, and we can't for the life of us figure out what kind of pepper they are. My dad used to tell me that eating spicy things would "put hair on my chest," but I think these peppers would burn the hair right off of my body, given the chance. Since I'm not the biggest fan of deathly spicy peppers, we're considering roasting them to reduce their heat to something similar to the peppers we normally use. So, I foolishly ignored advice about wearing gloves while handling hot peppers. I thought since they were "just" anaheim peppers I'd be fine... I was wrong, and I repent. Does anyone know of a way to stop the burning? I have washed my hands repeatedly with soap in hot water and tried OTC burn spray. I was cooking this sausage and peppers recipe. I warmed up some EVO, browned the sausage on both sides, about 3 minutes on each side. They left some brown bits behind. I drained the pan of EVO and fat. There was still a slick of oil and brown bits. I then cooked the onions and peppers on the same heat (6 / medium). The brown bits seemed to dry up and eventually collected and burned. What did I do wrong and what could I have done to prevent them brown bits from burning? Also, how much oil are you supposed to put in the pan to brown the meat? Just enough to coat the entire bottom
