I just made chocolate crinkles for the first time and I really like them, but they are a bit too dry, making them slightly crumbly. It's possible I over-baked them a little bit, I'll try to bake them a minute less next time. Is there something else I can do to get them some more moist?
I halfed this recipe, resulting in:
41 g cocoa powder
75 g sugar
60 ml oil
1 tsp vanilla
130 g flour
1 tsp baking powder
1/4 tsp salt

You could try replacing part of the sugar with a liquid alternative: molasses, maple syrup, honey, et cetera. You don't need to modify it much to start with, try replacing 10 grams of the sugar with 10 grams of an alternative.

I would add a small piece of butter the next day when I'm preparing to bake it .. Then after its out the oven cover it so the hear keeps it a bet more moist !
I have a recipe for a chocolate buttermilk cake. It's not constructed like most cakes, but it's always turned out OK. I've always wondered what does the coffee in the recipe do? Is the coffee just there as an additional flavor? (The cake never tastes strongly of coffee.) Can I use a cheap instant coffee, or will a higher quality coffee make a difference? When I make snickerdoodles, they taste too "tangy" to me which I believe is due to the acidity of the tartaric acid. The recipe I have calls for a 2:1 ratio of cream of tartar to baking soda which is consistent with the proportions in How do I make a baking powder substitute? and What is the difference between baking soda and baking powder? I would like to make a chocolate brownie which has no added sweetener. It would be great if it were gluten-free as well, but that is less important. I tried a recipe from Dinah Alison's "Totally Flour-Free Baking" which had as ingredients: 140g butter, 215g sugar, 2 eggs, 75g ground almonds, 4 tablespoons of cocoa powder, 200g chocolate, 85 g walnuts, 1/2 tspn of vanilla essence and 50g choc..., and the cocoa butter made it less chocolatey. Possible Duplicate: How can I bake normally fried foods? I usually cut my potatoes into sticks that are slightly bigger than your generic frozen fries. I've tried baking the sticks with low temperature (350) / long duration and with high heat (425) / short duration. I still can't achieve the crispy on the outside but moist, soft, and not dry on the inside. The results are either mushy or crispy but dry and unchewable. Possible Duplicate: What does it mean to “fold in” an ingredient into a mix? I made pancakes this morning using a recipe on the back of the package. I mixed up the dry... when I'm done? I tried a gentle lifting motion, which didn't work very well. The egg whites were stiff enough to mostly keep their form so I had to smooth them out and push them around a bit to get them kind of mixed in. By the end, I felt like I was frosting a cupcake and then lifting the whites until they broke. I kept doing that type of motion gently until it became kind of pancake-y. I
