I'm trying to make a dessert I had in Palermo, Sicily. I wanted to find a recipe for it online, but I can't remember the name of it now. I know it's fairly common, but googling didn't help. It's basically just a large round flaky pastry with a large opening in the center and filled with a chocolate cream. The cream is not hidden by the pastry, but it is in the open. It's similar to a danish.

Is it the calzone ..or the Eclair?? I looked up some italian desserts and found something called chocolate Canollo I also know that in Sicily they have the kinda of a puff pastry filled with all kinda stuffings called Bigne ! Hope this was helpful
The other day I ventured into a grocery store that sold a lot of root vegetables that I have never seen before. One of the vegetables was a large round thing, and when I poked it, grey 'smoke' came out of it, like one of those mushrooms you stepped on as a kid. A mille-feuille (or tompouce) is a pastry, consisting of layers of puff pastry with pastry cream in-between (see this if you don't know it). If you buy it in a pastry store, I find that the glazed top is unique for this pastry. Recipes online tell me that it's confectioner sugar and egg whites, but I think it's something else. It's solid, yet soft. You can see your tooth print in it. It's white and sweet. I can't exactly explain how it differs from regular egg white/sugar icing, but in my opinion it does. I followed this recipe for a quick "Danish" dough, at http://www.ezrapoundcake.com/archives/11051; scroll down to food processor dough. The ingredients were: 1/4 CUP WARM WATER 1/2 CUP MILK, AT ROOM TEMPERATURE 1 LARGE EGG, AT ROOM TEMPERATURE 2 1/4 CUPS WHITE BREAD FLOUR 1 PACKAGE (1/4 OUNCE) RAPID-RISE YEAST OR 1 TABLESPOON FRESH YEAST 1 TEASPOON SALT 1... baker, so please bear that in mind. What might I have done wrong? One thing about the recipe that troubled me is that the recipe said to let the dough get to room temperature after refrigerating
My wife's birthday is coming up and I want to make a cake for her. I was thinking of making a layer of sponge cake, amarena cherry sauce (cherries, wine and sugar), chocolate mousse, another layer of sponge cake with sauce, Diplomat cream and amarena cherries on top. The problem is that I won't have time the day we eat the cake (Saturday) and the day before (Friday), so I need to make it in advance. I'm thinking of preparing the sponge cake, cherry sauce and chocolate mousse on Thursday and build the bottom layers and put it in the freezer. I can make the Diplomat cream on Friday morning

I want to bake a chard quiche. Normally, I would use short pastry for the crust, but I want to practice my flaky pastry skills. Still, I plan to bake it in the normal quiche form. It is white glazed ceramic, slow to heat up, slow to release heat, and doesn't get as hot as metal. Will this be OK? Can I expect the flaky crust to turn out nice, or do I risk it to become soggy/non-crispy/whatever?
Possible Duplicate: Is it possible to make Sour Cream at home? I make yogurt by adding a small amount of yogurt to milk, heating it slightly (barely in this weather!) and letting it sit several hours. It's, of course, a simple process--that's rather what yogurt is all about. I understand sour cream is made by the same essential process, but I don't know what changes I would need to make. Could I just add a little yogurt to some cream? Do I need to change the ratio of fresh to culture? Does the incubation time or temperature change at all?
