How long can I store a food in the pantry, refrigerator, or freezer?
I left out 2 raw but frozen 6 lbs beef briskets in the sink at 7PM to thaw out because they were rock hard from the freezer. I had intended to transfer them to the refrigerator but only the next morning at 7AM did I remember that I had forgotten to put them in the refrigerator.
They will be seared on both sides first in a heavy cast iron pan and then braised for 3-4 hours in the oven. Is this still safe?
Unfortunately, as sad as it is to see two nice briskets get wasted, I would not feel comfortable using them. In the guidelines from the USDA, thawing on the counter is explicitly discouraged. Additionally, it is likely that in that amount of time the surface of the cuts came up to temperature to allow for otherwise inactive (due to freezing) pathogens to become active again. In the absence of a vacuum pack and having been left at room temperature for that long, it is likely that even in the original paper wrapping the food has become unsafe to eat.

It was on low from 12:00am to 8:00am. From 8:00am to 12:00pm, the crock pot was turned off, and at 12:00pm the food was 'warm' but above room temperature. Is this still safe to eat? The crock pot was covered, but its anyones guess (guestimating using some math) how long the loin was at the safe high temperature. I immediately threw it in the refrigerator, but if I do keep it, should it be brought up to 135°

My power went out for about 20 hours today, from 1am to 9pm. I'm wondering if the food in my refrigerator and freezer are spoiled. Here's some info: High temperature was about 100F outside, but only reached 90F inside. Fridge and freezer had no power the whole time, but I didn't open them at all while the power was out. The items I'd be concerned about: Fridge: Milk (opened), eggs, cheese (pre-packaged, but opened), bacon (opened) Freezer: sausage, ground beef Actually, the ground beef stayed frozen, but the sausages are now soft. I made a large pot of sloppy joe mix with hamburger in it and after it was cooked put it in my crockpot on low for my boys to eat when they got home because i was leaving,i was gone a little over 2 hours and the boys had put the sauce into another pan to put it away and forgot to do so it sat on the counter for over 2 hours....should i throw it away?
