I am thinking of making dinner tonight (probably pasta) and the ingredients that I have a courgettes, tomatoes and half a butternut squash. I am 70% vegetarian
I first added olive oil, then fried onions and garlic, then added in the vegetables. I added in salt, pepper, souvlaki seasoning, sage and thyme I believe for extra taste. At the end I mixed in a tablespoon of Ricotta (my favourite cheese). The pasta I had with it was Rigatoni.
However the taste turned out to be a bit bland. What can I do to spice up this recipe? I want it to be more intense,perhaps roasting the vegetables first and then frying them. Will that help? Otherwise what can I add to increase its taste?
Edit : Instead of having pasta with this sauce, can I have Ciabatta baked in the oven with it?
try adding some green, yellow and red peppers with the added vegetables. I believe these peppers give a strong taste.
Also you could try to add some paper laurel when cooking, then remove it upon serving, it gives a good taste and smell too.

I have recently heard statements to the effect that there is no justification for the practice. Is that true? If not, what is a legitimate reason for adding oil to the water?

I have a recipe that requires pumpkin, but I would like not to use it. Are there other vegetables, or combination of vegetables I could use? I would like to get the same consistency; if then the taste is similar, that is a bonus. I report the list of ingredients used for the recipe: Tofu (250 gr) Onion (1) Pumpkin (200 gr) Parsley Pasta (400 gr) The pumpkin is cut in cubes, cooked covered with few water for 15 minutes, and then the other ingredients are added. I am planning on making a pretty standard (read: whichever pops up first in Google) recipe for Broccoli Cheddar soup; i.e. brocolli, cheddar, chicken stock, and about 1/2 cup flour per 4 bowls... and cheddar (and the stock is pretty potent so I'm also not worried about that) so I am not worried about using too much nutritional yeast. To achieve the effect of 1/2 cup flour thickening, what is an approximate ratio for the same effect with nutritional yeast? Also, I have noticed with other dishes that, unlikely the grainy/clotty results of flour, nutritional yeast can be added after the fact
I made Brioche for the first time tonight using the Rich Man's Brioche recipe from Reinhart's Bread Baker's Apprentice. The recipe basically leaves out the butter until the very end when the dough is fully mixed and hydrated. Only then does the recipe require the butter to be slowly added into the dough tablespoons at a time using a wooden spoon. I am usually used to creaming the butter... is the butter incorporated only after the dough is fully formed? What would happen if I were to cream the butter with the sugar(small amount of it) and egg at the beginning before adding

We have a spaghetti dinner at our church and the problem is is that we don't mix it in with sauce because some don't want sauce others don't want a lot of sauce some do. So my question is after I cook the pasta I put it in a colander to drain and it sets till ready to put in hotel pan on the steam table, however by then it's stuck together, how can I keep this from happening or how do I keep it from happening?
