I cooked a chicken curry in the slowcooker last night, I came down this morning and its way too oily. I think because of this the coconut milk has separated a little too.
Any way I can save this, even a little?
Allow it to cool, then put it in the fridge for a few hours. The fat should rise to the top and harden, making it easier to scoop away.
If you can't wait for it to cool, either skim the oil off with a spoon or use some kitchen paper to soak it up.

The aroma is different when I use Sri Lankan curry powder, (in my opinion, better,) and it tastes different too. Does anyone know the spices used in making Sri Lankan curry powder?

Maybe heat up some oil in another wok and upturn the dish into it? ...I was making a dish that requires the use of onion paste. Sometimes I make sautéed potatoes. I dice the potatoes into little cubes about 1cm or less to a side, then cook them in a pan with about 1-2Tbsp of hot oil. The result is sort of like little french fries. In spite of the oil, the pieces have always stuck to the pan. I hypothesized that the potatoes were absorbing the oil and that must be the culprit, so I tried it once with about double the oil. The potatoes still stuck, but this resulted in a layer of dark-brown oily crust forming in the bottom of the pan (that was a pain to remove, too). It seems like the best option is to use little oil
I tried to make a Thai peanut curry and used a highly rated recipe: I have no experience making Thai food and have only eaten it in restaurants. It did occur to me that the peanut butter content seemed very high in that recipe. The resulting dish was in fact far too sweet and fatty and not nearly spicy enough. My first inclination would be to eliminate the sugar, reduce the peanut butter. The spiciness was easily remedied by the liberal application of sriracha. I went to a Thai restaurant this afternoon and ordered Massaman curry, which I've never had before. When I make curry at home, I usually mix it with chicken and pour it over rice and eat. But this curry was served in a bowl with a serving of rice beside it. So, doing what I normally do with curry, I flattened out the rice, poured the curry over the rice and ate it. I realized afterwards that perhaps I was supposed to put the rice in the bowl and eat it like that, but I hadn't heard of doing that before. Is it normal to serve/eat curry that way? We use both tomato ketchup and curry ketchup as condiments in Belgium. On the curry ketchup label, amongst other ingredients is "curry (1%)". So I tried adding curry powder to regular ketchup to see whether I could end up with curry ketchup, but I think the taste was off. The colour was close though. I know "curry powder" is a spice mix that can differ, but is curry ketchup really just ketchup with curry powder added? Or do they mean a bit of a real curry (the dish)? Or are there other differences? Is it possible to make curry ketchup with regular ketchup?
