Is Apple Cinnamon Oats an Indian recipe? If not then are there any variations how it is prepared elsewhere in the world?
Looking at the recipe, it appears to be just a basic porridge. So no, I wouldn't say that's unique to Indian Cuisine; wikipedia suggests it's "traditional and common in English-speaking countries, Nordic countries, and Germany". This is specifically rolled-oat porridge:
"Rolled oat porridge is common in England, Australia, New Zealand, North America and Scandinavia. It is known as simply "porridge" or, more commonly in the United States and often in Canada, "oatmeal"."
Wiki suggests wheat, maize, and rice porridge are more traditional in India, so I suspect this is a modern adaptation owing to the ubiquity of rolled oats in supermarkets.
Apples and Cinnamon is arguably one of the tastiest flavors of instant oatmeal in the US. It fills the bellies of countless American kids before school, and surely some of their parents too. Oatmeal is regarded as everyday (American) food, definitely not associated with Indian cuisine, with or without apples and cinnamon.
The recipe I am looking at for Apple Crisp by Ina Garten calls for 1 cup of oatmeal. It doesn't say prepared oatmeal, or rolled oats, just "Oatmeal". Is the recipe asking for 1 cup of prepared oatmeal (rolled oats + water)? 1 cup of rolled oats and then prepared into oatmeal? Or is it something else?
If I go to make coffee and find that the coffee is a little old, I'll sprinkle a little ground cinnamon in the grounds in the basket before brewing. I won't use enough cinnamon that you can actually taste it in the coffee, but it seems to cut the acidity and bitterness. Does anyone know why this works? Is there anything other than cinnamon I can do this with?

There was an article early march on npr called Oberoi's Kitchen: The Art Of Indian Haute Cuisine. It featured several recipes and talk of a traditional workman's lunch called atta chicken. It is a featured dish in this chefs restaurant but he did not give the specifics of the dish. I have searched everywhere for a recipe. Can anyone describe this dish and/or give a general idea of how it's made? I'm about to make cinnamon rolls & one recipe calls for 2 whole eggs. The other recipe calls for 3 egg yolks. Which one will give me a moist, soft, cinnamon roll?
I usually make steel cut oats in a rice cooker (1:3 ratio of oats and water) and generally have a couple of servings left over. When I try to reheat in the microwave it comes out all congealed together in small little chunks. Even if I put a little milk before microwaving still doesn't seem to work - The milk stays settled on the bottom of the heated bowl and the oats are still clumped together. Any Tips?
