Shelf life of spices
Suppose I grind the mustard + cumin + pepper seeds and keep them covered in a bowl, after how much time should I expect them to lose their flavor?
Authoritative answers with references to some credible sources will be appreciated.
The packed powdered/ground spices we get in shops don't taste the same as freshly ground. Hence my question.
Info required for spices namely: Cumin, Mustard, pepper. and Garlic/Ginger too.

A NY Times article says it's a waste: After I’d heated them, none of the olive oils had much olive flavor left. In fact, they didn’t taste much different from the seed oils. But How to Cook Everything says it's a good idea: There is a myth that olive oil is not good for frying; on the contrary, it adds a delicious flavor to many savory fried foods. OMG which one is it?

After heading to my trusty Indian market yesterday I was speaking with the owner about how awful fenugreek seeds are uncooked. He suggested (with black mustard seeds and cumin seeds) to throw them in the pan with a little bit of oil. I've read much about people extolling how good the dry heat is for the spices. Personal experience tells me that adding oil to the pan works better. Does cooking with oil change the flavor of a spice while toasting? Are there any spices that it is important to toast without oil?
Possible Duplicate: How long can I keep eggs in the refrigerator? I've got some eggs in a carton (regular Grade A eggs) in the refrigerator. The "sell by" date on them is October 2nd. Today is October 19th, so that's about two and a half weeks past. Generally, foods are good for a couple weeks past the sell by date, but how many weeks do I have before they aren't edible (spoil or generally get "the funk"). If I made french toast in the morning and used them, would they be good? I'm more concerned with 100% safety than them being 10% less awesome tasting after a certain time.

The cayenne pepper crops are in and I have been stringing peppers for winter use and drying, I also tend to use a lot of peppers in my dishes but inevitably an hour after processing those peppers I will rub my eyes, and that is a lot of burn. I know I could use latex/rubber gloves but I am not going to. I have tried everything including dishwashing detergent, the dry kind, lava soap, vinegar, and coffee grounds nothing seems to work. How do you remove those oils from your hands?
