I baked my turkey, cut it off ahead of time, and froze it. When I reheat, should I have it thawed and reheat in slow oven with chicken broth and the drippings from the turkey, or should I reheat in hot oven? It seemed a little dry.
When you reheat, does the turkey get more tender or does it get tough?
Reheating the turkey will not render it more tender, though it can make it more tough if you heat it to a sufficient temperature to begin cooking the proteins again.
I would recommend having the turkey thawed prior to reheating and then warming it in a low oven with some broth as you mention. Reheating in a hot oven would increase the chances of overheating resulting in dry turkey.
If the drippings form the turkey are not fatty those would be fine to use as well. If there is a lot of fat in the drippings I would be worried that the turkey may seem greasy when eaten.
This is something I've planned on trying but haven't wanted to spend the $ for experimentation. Buying sliced turkey for lunches at the deli is a tad pricey. At my local market I can get frozen turkey breast for a much better price per pound. But, the turkey breasts are 3+ pounds, and my household would use ~ 1# a week. I figure I can just get a turkey breast, roast, make slices, and freeze a couple of batches for upcoming weeks. So, for the question. Do turkey slices thaw out ok in terms of texture and taste?
I recently made some pan-fried chicken breast halves. When I wanted to reheat the leftovers I tried to do it in the conventional oven instead of the microwave oven as usual. Following some instructions on the Internet, I preheated to 450 °F, put two chicken breast halves from the refrigerator on a baking sheet, covered with aluminum foil, and then put in the oven for 10 min. In the end... the microwave in the end instead of sticking to the oven? How should I have heated these up in the oven instead of what I did? I worry about overcooking or burning the food.
I've made a cooked chicken on the bone (Coq Au Vin), however some guests couldn't attend, so two Chicken legs are left over. I'm planning to cool then refrigerate these and then re-heat in a pan tomorrow (we have no microwave). As long as I get it piping when I reheat it is it ok food safety-wise or should I be doing things differently?
I'm just back from a trip to Hawaii, and hot to make an oven version of kalua-style turkey. Of course, all the recipes call for Ti leaves for wrapping the whole thing up. I don't think I can easily get Ti leaves locally, though I know I can get Banana leaves. I know that you can't just substitute banana leaves because they do have a slight anise flavor--fine if you want it, but definitely.... Does anyone know if Ti leaves have a flavor and what it might be like? If folks think there's not any (or very little) flavor imparted, what might be a good substitute if I can't get them?
I've made Bread Stuffing with Fresh Herbs from Cooks Illustrated this year for Thanksgiving, and I'm going to need to reheat it to serve. It cooked for seventy minutes at 375 the first time around, but I'm not sure how hot to set the oven or for how long to give it to get it hot without drying it out terribly the second time. Also, is there a standard amount of chicken broth people add to stuffing on reheating?
For reasons not related to this question, I had to cook my turkeys yesterday. My meat themometer died near the end of cooking. So I ran to the store to get one "real fast". Three stores later I came home to two over done birds (185 degrees). While not totally dry, I don't want them to dry out any more while reheating them today. Should I slice them then heat them? Is there a better way to reheat than another? (ie oven vs microwave vs warming drawer vs (some other heating tool).)

My oven heats up by putting on the grill. Yesterday I was making pie and the top burned a little bit. This happens almost every time. It happens at the moment the grill goes on for a short moment because the oven has cooled down a bit. So the top of my pie burns, but the middle is not fully cooked jet. I always make sure the oven is fully heated before putting in the pie, and of course keep the oven door open as short as possible. I was wondering, is there a trick so that my pie does not get burned when the oven is re-heating? Right now I turn down the oven a little bit so it won't re-heat
