This question has been asked before but only with respect to washing a small container.
We have a friend who runs fruit stands in the summer and we typically get 10 pounds of blueberries at a time from him. Before freezing or eating, they need to be washed, and I always struggle to find an efficient way to get rid of the squished berries, the stems, the leaves, etc.
I'll post what I do as an answer, but I wonder if there is a better way, or some equipment that would make it easier.
What I do is use a big plastic bowl. The bowl is about 18" in diameter at the top and holds about 2 gallons of water.
I fill the bowl about 1/2 to 2/3 full of blueberries and then fill it to the brim with water and leave the water running into it. As the bowl is filling and when it's full I gently agitate the berries with my hands.
Most of the chaff naturally floats to the top and spills over the edge of the bowl. As I agitate the berries, I also try to direct any leaves to the edge and pull any berries back from the edge. I lose a few good berries, but not too many and since I'm dealing with a lot of them I don't worry about it too much.
As I'm agitating the berries, I can feel a lot of the squishy ones and pull them out to look at them and discard if they're too far gone.
When most of the chaff is gone, I dump the berries into a colander and let them drain. I've tried spinning them in a salad spinner, but for the amount of berries I'm trying to process, I've found that in order to remove any appreciable amount of water I can only put a small amount at a time in the spinner so it takes forever to spin them all.
So I let them drain, and then since I'm usually freezing these berries, I put some paper towels down on a tray and spread out a layer of berries. When they're spread out I can pick out most of the squished or shriveled ones that I missed earlier, then I pull the paper towels out and freeze them.
I haven't ever looked for one, but I've always wondered if there's such a thing as a colander or sieve or screen with really big holes - i.e. just slightly smaller than a blueberry - that I could just dump the berries into and rinse off all the debris.
One big limitation to this technique is that it bogs down if you're dealing with less than fresh berries. Picking out all the squished or moldy ones if they've been sitting around too long is problematic.
Possible Duplicate: Is there any way to remove stains (e.g. from curries and pasta sauces) from plastic containers? I find that when storing curries or tomato based sauces in the freezer they stain the tupperwear and also leave a lasting smell. Is there a tupperwear that avoids this and how do I best clean tupperwear to get rid of the colour and smell?
I'm going to grill a whole duck tomorrow. I am going to steam the duck before so the fat will render off. When that's complete, I am going to have a pot full of duck fat and leftover water. What's the best way to get the fat off? Refrigerate the water till the fat separates? Boil the pot until the water evaporates?
If I rinse fresh blueberries before I eat them, does that wash off the antioxidants? Why would washing blueberries before freezing them cause tougher-skinned berries?
We went to an island for a trip to explore local fish markets. This place is mainly exporting fish. We managed to get one of the best smoked fish (tuna, mackeral etc) from their local markets. This is different from smoked salmon and rather very hard in texture. Just before the flight we packed them with original plastic bag (no ziploc) into a packaging box and taped it - put in the dedicated... type fungas layer on all the fishes. What is the best way to remove the fuzzy inner threads from on top of the artichoke heart, without losing too much delicious heart? Is it easiest to cut out the choke (the fuzzy stuff) before or after steaming the artichoke? Does anything work better than a spoon? Is there any way to remove the choke without cutting out pieces of heart?
A few weeks ago I made some homemade bread pudding. We had a few servings of it, the weather got hot and humid, and I soon learned that mold really likes bread pudding too. The pan is a stoneware pan. I rolled up my sleeves, got some really hot water, and scoured it as best as I could but it still has dark spots and a moldy "funk" to it. I don't really want to use it like this. Is there a way that I can clean this pan or is it a lost cause?

I'm taking a trip to the berry patch today. I'd like to get say 3 pounds of blueberries and freeze them. The problem is that when you defrost them, they're all busted up and mushy. So I wonder if I could put them in the oven at 150 for an hour or so and dry them out a bit before I freeze them. Would that pull some of the water out and result in less exploded berries when the water in them freezes? What's the best way to freeze a blueberry? Edit: years later, bought a food dehydrator. When I roast a goose, I decant the fat, strain and freeze it. I typically get a pint or more. This seems to work well, I can chip off suitably-sized pieces from the frozen block and use them as necessary. But is this the best way to store it, and if so, how long can I leave it for in the freezer before it's no longer safe to use?
