I'm interested in baking thighs, legs, breasts and wings. How long do each of these items need to bake and at what temperature?

According to the USDA:
Round chicken/turkey: 165°F / 74°C
Whole chicken/turkey: 180°F / 82°C
Poultry breasts, roasts: 170°F / 77°C
Additionally, the USDA says the thighs and wings of poultry should be cooked "until the juices run clear."
Although the following temperatures will make the meat safe to eat, you might want to drop the temperature by 3-5°C for more flavor.

I make yogurt by adding a small amount of yogurt to milk, heating it slightly (barely in this weather!) and letting it sit several hours. It's, of course, a simple process--that's rather what yogurt is all about. I understand sour cream is made by the same essential process, but I don't know what changes I would need to make. still haven't really figured out what is meant by this. I have several questions: How can I tell that the oil is separating? I'm never quite sure whether I'm seeing oil or water coming out of the mixture while it's cooking. How long on average do you need to cook the mixture until the oil separates? What causes the oil to separate? Is it simply that all the water has been cooked out of the mixture? Why do you need to let the oil separate?

Making a big batch of roux is a hassle, so I'm investigating how to make my life a bit easier. According to 'Ideas in food', you can make roux in a jar in a pressure cooker. Nice, but the quantity is too little for my needs. In the Cajun cuisine you can make roux for gumbo in the oven. That won't work for me as I need it to work as a thickening agent. Maybe it would work at a lower temperature... (at which point the starches should be gelatinized). What do you think? Is 12h too long or too short? Is 85ºC high enough to lose the raw flavour?
