I have some white rice cake. The instructions say to soak it in water overnight, then either fry it or simmer it. I tried part of it simmered some time ago, and didn't like the bland taste. So today I shallow fried some of it. I had soaked enough for two batches. The first batch went in when the oil was at about 190°C. They took a lot time to get ready, and soaked up too much oil in the process, coming out greasy (despite the fact that I packed them in paper as soon as they came out of the pan). For the second batch, the oil had gotten at above 250°C, actually above the smoke point. These cakes puffed up, forming air pockets between the cake body and some kind of thin "skin" on the upper side. The underside fried quickly and well, but when I turned them, the puffed bubbles kept the cakes from contact with the fat, so this side stayed almost unfried.
Is my frying technique wrong? Should I drain the cakes for longer time before frying (they had about 10 minutes of draining now)? Is there an optimal temperature for frying them so they neither get greasy nor puff up?
Edit: I didn't know that there are many kinds of rice cake. Mine are dried.
The first one is raw, non-soaked. The second one is from the first batch (greasy, pale). The third one is from the second batch (with the bubble).
Assuming you mean soft, fresh rice cakes, they just need a quick stir frying.
Those are Shanghai Rice Cakes - Nian Gao If you google, you'll find a bunch of recipes for what I think of as the "standard" rice cake dish, with shredded pork and cabbage. In most of them, the soaked/softened rice cakes are added at the end, after all the other ingredients, so they only get lightly fried.
I was making a dish that requires the use of onion paste. Usually I'd fry the paste, but I had a bunch of other stuff that needed to be fried too, so I put that in first, and I guess by the time I added the onion paste there wasn't much oil left and it didn't get fried. Everywhere I've read about cooking puffed rice noodles says that the soaked noodles need to be fried. I need a less messy alternative to frying. Is there a way I could bake them to get the same or similar consistency?
While following the advice in this answer I placed two ripe Bhut Jolokia peppers in a fresh bottle of olive oil, and put it on the shelf to sit for a month so the heat from the peppers would infuse the oil. However, one of the peppers became covered with white mold. The two peppers were put in at different times, as they ripened, since I only got half a dozen peppers from the plant, and they all ripened at different times. Today someone at work described eating a delicious halibut taco. I've never had one before but it sounds awesome, so I'm going to try to make one some time this week (but since I have a lot of salmon... cut the fish into cubes, and fry them up, then throw the cooked cubes into a tortilla, roll up with some sauce, and serve (to myself). If it turns out good it would be a great recipe to share with friends and family. However this is not something I've done before. I know fish breaks apart quite easily when cut into small bits, so is it even possible to preserve "fish-cubes" in a frying pan
I have a very simple recipe for homemade pasta dough (one egg to 100g flour, some oil), and found this worked great on my first small batch. I mixed it in a stand mixer and immediately rolled it out, using lots of flour to keep things from sticking. It was a bit thick, but I chalk that up to inexperience. On my second batch I made slightly more dough and split it into four balls before rolling each one out. I've been making freezer burritos and eating them for lunches this week. The first batch I made microwave beautifully: just 45 seconds and they're hot all the way through. They were layered with rice, beans, and corn, nothing else (I don't eat cheese and I wanted them to be non-spicy so I can eat them when I'm feeling unwell). I tried to deep fry cauliflowers (without breading; I am NOT making tempura), but they turned out soft. I have seen that done on TV where cauliflowers are freshly deep-fried and turn out to be crunchy. But when I tried doing that, the cauliflower ended up soft and somewhat soggy. I increased the frying time thinking that may help evaporate the moisture inside the cauliflower but it then turned out soft and soggy with oil instead of water. Are there preparations that I need to do to the cauliflower, or are there something special that I need to add to the oil?
I was reading about frying in On Food And Cooking this weekend and it mentions that frying works so much better than oven cooking because oil has a far higher specific heat than air so it is able... Maillard reactions, but none of the oilyness from frying. I’d like to give this a try. but there are a few important hurdles I’d have to get over first and I’m wondering if anyone here has any guidance. around a few questions this raises: I did some calculations and it looks like I’d have to get the pressure up to around 70 psi above atmospheric pressure in order to get the water up around 155C
