I am a relatively new cook and like to make things in my spare time. My wife and I were in a restaurant recently for her birthday where she tried some Panna Cotta. She really liked this dessert and I was curious if there was a way that I could make it at home for her as a surprise? I do not have a lot of equipment if it would require fancy or specialized tools. Additionally, I would like to find a way to keep the cost reasonable and the total steps needed such that it is not too elaborate. Are there lessons learned that you have experienced when making Panna Cotta that I should be aware of? Lastly, what are items that I could pair this with for the rest of a meal?

Panna cotta is a very low cost dessert. It is just gelatinized, sweetened cream, with other items of your choice added (fruit, etc.) There are plenty of good recipes around the internet. There are no specialized tools other than a pot and stove (and ingredients) needed. It is a fairly novice dessert. The trick is to figure out the 'sweet spot' (pardon the pun) of gelatin. Just enough to keep it together, not too much so that it is like rubber.
As for pairings, I have served panna cotta with a multitude of different meals. I find that it doesn't really matter. What tends to matter is the flavorings used with the panna cotta. Nice berries in the summer, etc.
Panna cotta requires very few things: milk or cream, sugar, gelatine (sheet gelatine is the best), and something to mould it in. Whether that's a ramekin or a fancy mould or just a bowl doesn't really matter.
It is a blank canvas. I would advise starting simple; add vanilla bean to your cream as it cooks. Or honey. Or crumiel (which is essentially crystallized dehydrated honey). Brown sugar instead of white. Lavender. use basil, omit the sugar, and serve with tomato and mozzarella as a postmodern insalata caprese. Cardamom and cloves.

My mom will be traveling via plane this holiday season. She has a frozen apple pie. By the time she arrives at her destination (my sister's house), the pie will have thawed. Could she then cook it and refreeze it before bringing it to my house? There are too many days in-between for her to cook it at my sister's house and then leave it in the refrigerator. Please advise. I want to make popcorn panna cotta. I had a couple of ideas for this, either steeping milk in popped corn or (my preferred option) melting butter popcorn Jelly Belly beans into the milk and then making a panna cotta from that. These were to be served as petit four with a caramelised popcorn piece on top, and so I was going to make them in ice cube trays so each one was bite size. However I... sometimes getting a skin on in the more concentrated versions. Then if I added gelatine as I would for making a panna cotta then they came out firm and rubbery. I recently discovered how easy it is to make panna cotta via a recipe by Mark Bittman. The only problem I found was that my panna cotta started to visibly separate into two distinct layers after.... I enjoyed the distinction between the two while eating, but I would like something more evenly distributed in the future. I followed Bittman's directions to the letter, with the same proportions...), that would prevent this from happening? I would not mind leaning towards an all half-and-half solution to this, as the richness of all cream feels kind of cloying to me.
I forgot to put flour into my cookies (though I was careful to remember the oatmeal, and I blame the lack of flour on that). They are absolutely delicious, but also difficult to eat because they have more the consistency of goopy pie filling than a cookie that you could hold in your hand. Ideas include mashing them up, balling them, and freezing; and mashing them up, adding flour, and rebaking. I understand that at this point they'll never be quite like cookies, but I refuse to waste them, and that would be easier if I could get them into a more manageable to eat format.

What could...My mother is confounded by whipping-cream. Some 20 years ago she started making cream-puffs which quickly became her pastry calling card. They always came out great and were always a hit. Some 15 years later, she cannot seem to make whipped-cream anymore. She still uses the same bowl, same mixer, same whipping-cream (Nutriwhip whipping-cream) and does everything the same way as she used
My friend wants to make coconut milk separate so that she can use the cream for whipping. Can anyone suggest a way of accomplishing this? Edited to add: I asked her to confirm that it was full-fat and she said 'yes, I'm not that dumb'. She's storing it at room temperature (rather hot lately in NYC lately) but is going to try chilling it to see what happens.
Recipes with milk and/or cream (panna cotta, ice cream, pastry cream, ...) often ask for the seeds of a vanilla pod (in Europe at least). A fair proportion of those also mention to throw the pod in the dairy as well. Since I re-use the pod afterwards (for vanilla sugar or vanilla extract), I have to clean them and I don't like to do so. Is there a real flavour difference in adding the pod as well, given that you can scrape almost all the seeds out? Do recipes just ask you to do so, because you'd get more seeds in the milk or cream, or does the pod itself give a special flavour?

A friend is planning her wedding and wants to do a lot of brownies, rather than cake, for dessert. She's planning on making it herself, with the help of friends, but would like to make it at least a few days, if not a week or more, in advance. What would be a good way to store a lot of brownies? How long will they last? Freezing is non-ideal, as freezer space is often tight at all of our homes and dealing with thawing/reheating lots of brownies evenly on the day may be problematic.
