I have a very simple recipe for homemade pasta dough (one egg to 100g flour, some oil), and found this worked great on my first small batch. I mixed it in a stand mixer and immediately rolled it out, using lots of flour to keep things from sticking. It was a bit thick, but I chalk that up to inexperience.
On my second batch I made slightly more dough and split it into four balls before rolling each one out. The first two I rolled out almost right away, cut and shaped the pasta, and threw on a plate with some flour until I got around to cooking it.
I left the last two balls of dough sitting for 30 minutes or more before I got to them, and these were much, much harder to roll out. I've since discovered (from Google and word of mouth) is that this is the opposite of what should happen, I'm supposed to let my dough rest to make it easier to work with.
So was this an anomaly? Should I repeat this (tough) task with the understanding that my previous experience was a one-off?
Or is there a special technique to rolling pasta dough made with egg (as opposed to water)?
Any thoughts as to what went wrong? (Or, perhaps, confirmation that my word-of-Google-mouth rumors are incorrect?)
(Also, I'm not monetarily endowed right now, so I won't have access to any other rolling equipment besides my trusty rolling pin)
Did you leave the dough covered either with either a slightly damp cloth or tightly with plastic wrap? (I prefer the latter). If not, the surface will dry out and it will be very hard to roll.
Pasta dough has to be sufficiently moist to be rolled properly.
Rolling the pasta (in a pasta machine) aligns the gluten strands so they stretch out and become parallel to each other. If the dough is too dry, it is more difficult to align them. This is why it's a good idea to coat unused dough in a thin coating of oil and cling wrap if you're not immediately working with it (a damp tea towel over the bowl will work as well).
baker, so please bear that in mind. What might I have done wrong? One thing about the recipe that troubled me is that the recipe said to let the dough get to room temperature after refrigerating overnight, before rolling out -- this made the butter softer so that when rolled it melted into the dough, but the even before the melting the dough looked way too wet. First off, I'm German, so you would think I know, but it seems traditional cuisine has not been passed down my family tree. This question really consists of two parts: What makes potatos dough (or I guess, starchy dough in general, there's all kinds of dumplings, there's pasta, etc) keep its shape when you boil it in water? This may extend to some degree to deep frying. What properties make... to be no egg and not a lot of flour in the dumplings. I'm also certain that either all cooked, all raw or half-half are common and widespread varieties, but there it stops. I would like to find some science
Yesterday I prepared the Rice flour dough with water (room temperature 17 degree celsius) and salt. I noticed: This dough did NOT stick to my hands at all. This dough did NOT stick to itself even. Its pieces kept on falling as I knuckled it over and over. The Chapatis made with this dough kept on breaking as I picked them. (I did NOT roll them too thin.) What care should be taken to prepare dough and Chapatis with Rice flour so that the things don't break? P.S. Never noticed any of these symptoms with Wheat flour. UPDATE: The hot water helped. I am exploring the world of home-made pasta. My first experiments, cutting the dough into stripes using a knife and throwing the stripes into the boiling water - eatable but with rather plump results, and a very cumbersome process! - show that if you want to do this on a frequent basis, you need tools. I can see two generic types of tools here. One, much used in my native southern Germany... and Spaghetti, feedback is welcome for all forms of pasta. Tools should be suitable for frequent use. I know that if I'm using dried or bought fresh pasta, I usually count on about 125-150g per person, depending on the pasta type and whether it is dried or fresh.
