The question on Dissolving cocoa powder in milk describes the two common workarounds for making chocolate milk with raw cocoa powder. While obviously it works easiest with hot milk, making cocoa slime/mud is a functioning alternative. It's however not very practical, which is why I want to renew this topic. However I'm not settling for anything but achieving something comparable to instant cocoa. So would rather like this question to border on food chemistry or industrial espionage. (Most likely the solution is some food additive though..)
So what's the magic behind Kaba or Nesquik? How do they turn cocoa dust into instant chocolate milk powder?
I've already figured out that ordinary baking cocoa is the weakly de-oiled one. Obviously the oil stipend contributes to the difficulty of mixing it with cold fluids. - So I went out and bought some strongly de-oiled cocoa, which subjectively mixes better already. (But that might be just post-purchase rationalization.) Adding glucose powder also helps both flavour and mixing abilities.
Yet that doesn't solve the issue satisfactory and still requires making a slurry. So there is probably really some food additive necessary. I've also (can't find link) read somewhere about steam (hot water) playing a role in turning cocoa powder into instant granules. But also obviously, I'm looking for something you can do in an ordinary kitchen, and which doesn't involve inventing complex machinery. So, do you have any tips, expert knowledge, links?
The magic emulsifier is probably soy lecithin.

I have a recipe for a chocolate buttermilk cake. It's not constructed like most cakes, but it's always turned out OK. I've always wondered what does the coffee in the recipe do? Is the coffee... something? Does the temperature of the coffee really matter? I have several bars of real white chocolate. I would like to make a chocolate brownie which has no added sweetener. It would be great if it were gluten-free as well, but that is less important. I tried a recipe from Dinah Alison's "Totally Flour-Free Baking" which had as ingredients: 140g butter, 215g sugar, 2 eggs, 75g ground almonds, 4 tablespoons of cocoa powder, 200g chocolate, 85 g walnuts, 1/2 tspn of vanilla essence and 50g choc..., and the cocoa butter made it less chocolatey. I was checking some sites on how to make chocolate myself. I should start with mixing cocoa butter, cocoa powder and sugar (and milk powder if I would make milk chocolate). Most sites mention "sugar... to be completely melted. But I believe it would happen (so the chocolate would not turn out grainy). Powdered sugar has smaller particles, so it should be absorbed rather quickly. However, there is also some starch added. Would this have an effect on the chocolate? Or is the amount too small for that? (After the mixing it together, I should melt and temper it, with adding some existing chocolate.) So, does
OK, so I'm trying to make fudge. The recipe which I'm following doesn't give all that much in the way of directions. So I'd like clarification of a few points, so I know what I'm aiming for. Am I... exactly when you do this? Does it have to cool to a specific temperature or something? (I've seen recipies that seem to suggest constant stiring all the way through, and others that say to only stir once cool...) Most tiramisu-recipes end with the last layer of mascarpone mixture spread on the last layer of lady fingers/sponge cake (and some chocolate powder on top). So you have a flat surface. I've seen pictures of tiramisu with a bumpy surface, like small peaks (picture of what I mean). I want to replicate the peaks, but I'm not sure how to do this. I already tried to form them when the last layer... seen also this question, but I don't think that would help me. If you think otherwise, please say so.
Commercial soy milk is fortified with lots of different vitamins. Is it possible to add these vitamins to homemade soy milk? If so how would you do it?
