I am trying to toast bread in a gas oven on a rack about 8 inches from bottom, but all the toast in the centre part of the rack are burnt and the ones to the sides are perfect, is this a normal thing with gas ovens or is my oven faulty? The bottom cover is in place I have not adjusted anything, I use a temperature setting of 180 degrees Celsius. Please do not chastise me for trying this I am just experimenting to see if I can Economize on equipment and even energy as most of the times something else will be going in the oven.
I suspect that it is because of where the flame is at the bottom and that I could place a thick metal plate on the centre of the oven floor, to prevent this, but I prefer to hear from someone with experience or any other expert.
We do that frequently. Hot spots develop in our oven too, but we control the thing by just swapping the bread from center to edges twice along the process.
I think adding a "thick metal plate" would do too, but the toasting time will increase (or at least the time needed to pre-heat the oven will be greater).

Is it generally some preservative that you normally would not add yourself? Whenever I try to make a loaf of bread, it is best right out of the oven. How do I cook ground beef (in those 1 pound tubes) using only disposable items? Details: I can cook pizzas in my oven by putting them directly on the rack. I can cook chicken and toast bread by putting down a sheet of aluminum foil, and setting the chicken/toast on top of that. I tried doing the aluminum foil trick w/ beef, but it gave off a lot of fat, which hit the metal at the bottom of my gas oven, filling the house with smoke. I tried making a little "tray" with the aluminum foil, but the beef didn't seem to cook well internally, plus there was a lot of fat left in the "tray

I have a new gas kitchen stove. The oven seems to burn so easily. I have a thermometer in there and it is registering the temp that I have the oven set on. I have seen where people have used a pizza stone to even out the heat. I want to know if you place a rectangle pizza stone directly on the bottom of the oven or should it be placed on a rack on the lowest setting? I would appreciate replies from anyone who has used this and if it had helped the problem
I plan to purchase a rotating rack oven for my bakery. What type (gas or electric) would achieve the best result for pastries and small breads?
I have heard that you can leave a pizza stone in the oven all the time, essentially storing it there. What are the considerations to keep in mind when doing this (type of oven, placement of stone, etc.)? I currently have a gas oven with the element located inside the broiler drawer below. Can I put the stone directly on the bottom of the oven, or should I keep it on the lowest rack? Are there reasons to remove the stone from the oven, if you're cooking certain things?
I don't have a metal cake pan. I bake my normal cakes and cake layers in a pan with a glass bottom and silicone walls, and cakes which can be expected to leak in a porcelain quiche pan. Sadly, my oven has a hot corner. If I don't turn my cake around during the baking, one corner is going to be overbaked or even burn. So I have to turn it while in the oven. But the bottoms of my pans don't slide easily on the rack. The first doesn't touch the rack with the glass, it touches it with the silicone part, which has a friction comparable to smooth rubber. I am interested in making the dense pungent black bread that is traditional in Russia. Recipes for black bread are varied and seem to disagree with one another. Too many of them make spongy, pumpernickel-like loaves which, while good, are not what I'm trying to make. Is Russian black bread always made with a sourdough starter? Some recipes have called for cocoa powder or coffee to darken the loaves as just rye flour will often turn out gray instead of dark dark brown. Are such additives common in traditional black bread recipes? If not how is the dark color obtained?
